Indulge in the culinary finesse and time-honoured interpretations of old Tokyo as Capital Kitchen unveils an exquisite pop-up Edomae omakase experience by distinguished Chef Ryoichi Nakatani.

Embark on a gastronomic voyage through time – dating back to the 1800s when Edomae originated – and journey through the intricate curing techniques, precise knife skills and the seemingly-simple artform of Edomae-sushi making that sushi maestro Ryoichi refined over the last 20 years.

Keeping true to its tradition and roots, Edomae-style sushi involves some form of curing of the fish while keeping its raw texture, or introducing a cooking element to ensure preservation of the fish before serving.
